In the last two decades, the metabolic syndrome is in focus of many health agencies worldwide. Understanding among the most important glucose intolerance and insulin resistance, other disorders have been framed in this category. The non-alcoholic hepatic steatosis appears to be one of the components of this syndrome. Several studies point to the increased consumption of fructose linked to the onset of sedentary steatohepatitis. From that premise, this review aimed to the search for studies that suggest the role of exercise as an important weapon in the treatment and prevention of non-alcoholic hepatic steatosis.

This article reviews the metabolism of fructose and sorbitol, their main clinical indications and the consequences of inadequate use. Fructose, an important carbohydrate in the diet, is present mostly in fruits and vegetables; it can also be synthesized from glucose in the organism, through the sorbitol. Fructose is known for its metabolism's inherent errors, whose clinical manifestations are potentially serious, as well as for its use as a glucose substitute in the diabetic patients' diet, due to its metabolism not being dependent from insulin. In the last years, especially in developed countries, the consumption of fructose has increased considerably, due to its use as a sweetener in industrialized foods. However, adverse side-effects may occur with the excessive ingestion of fructose, such as the increase in blood's triglycerides and cholesterol. Therefore, to know which are the patients' normal blood levels is quite important for establishing the safe amount of fructose to be prescribed, as well as for allowing the screening of metabolism diseases associated with fructose.

Invertase from Saccharomyces cerevisiae was immobilized on agarose beads, activated with various groups (glyoxyl, MANAE or glutaraldehyde), and on some commercial epoxy supports (Eupergit and Sepabeads). Very active and stable invertase derivatives were produced by the adsorption of the enzyme on MANAE-agarose, MANAE-agarose treated with glutaraldhyde and glutaraldehyde-agarose supports. At pH 5.0, these derivatives retained full activity after 24h at 40°C and 50 °C. When assayed at 40°C and 50°C, with the pH adjusted to 7.0, the invertase-MANAE-agarose derivative treated with glutaraldehyde retained 80% of the initial activity. Recovered activities of the derivatives produced with MANAE, MANAE treated with glutaraldehyde and glutaraldehyde alone were 73.5%, 44.4% and 36.8%, respectively. These three preparations were successfully employed to produce glucose and fructose in 3 cycles of sucrose hydrolysis.

O objetivo deste trabalho foi identificar e quantificar os açúcares em frutos de pessegueiro da variedade 'Biuti', armazenados sob condições de ambiente (27,3ºC; 70% UR) e sob refrigeração (4ºC; 90%), comparar as diferenças entre os teores de açúcares nas duas condições de armazenamento. A identificação e a quantificação precisa dos açúcares (glicose, frutose e sacarose) foi realizada por cromatografia em fase líquida HPLC. Verificou-se que a sacarose foi o açúcar encontrado em maior quantidade, sendo verificado apenas traços de glicose e frutose em alguns frutos. Sob condições ambientais, os teores de sacarose do 3º até o 9º dia de armazenamento não diferiram significativamente entre si; entretanto, no 12º dia, os frutos obtiveram baixos teores de sacarose, pois os mesmos já estavam em processo de senescência. Sob refrigeração, o aumento nos teores de açúcares dos frutos ocorreu gradativamente durante todo o armazenamento, e ao final do mesmo, verificaram-se os maiores teores de sacarose, frutose e glicose, os quais eram mais elevados do que os encontrados nos frutos armazenados sob condições ambientais.
